A Healthy Themed Girls’ Night

January 18, 2013

A very important part of my rest day is to make sure that I eat extra delicious foods throughout the day.  

It is okay to be jealous of the below salad.   Beans, fajita veggies, chicken topped with 12 inches of salsa, corn, lettuce and more salsa.  I have to tell you something about Billy that you probably aren’t going to like.  He doesn’t find Chipotle very delicious.  I know, it is actually really hard on our relationship so that is why I have to force my friends to go with me during the day while Billy is at school.  

I really don’t know how a human being could not want to eat at Chipotle every meal of their life.

I finally have a picture for you where Brooke isn’t smiling.  The reason for her serious face is that she doesn’t like it when another little girl has more hair than her.   We will work on it.

Someday I will learn to not take pictures standing in front of windows so that it doesn’t turn out so dark.

These would be the Mrs. Field’s recipe for chocolate chip cookies.  My friend brought them for us and wow.  Seriously.

Billy surprised us yesterday and came home at about 3 to hang out.  We did laundry and I rewatched the Biggest Loser with him because I did the unthinkable and watched it without him the other day while I was running.  I think he is still mad about it.

Last night was our monthly girls’ night.  The dinner theme was healthy foods.  Lettuce wraps, edamame, whole wheat pasta with vegetables and fruit.

So I bought this loaf mix in December but never had a chance to make it for the holidays.  I brought it for dessert because I figured it had to be at least a little bit healthier than the normal desserts that I make.  I just added a new row to our excel budget spreadsheet titled, ‘Savings for Dec. 2013 to buy as many Peppermint Loaf Mixes as possible.’   This should be sold year round.

Today I did an easy 5 miles with a couple friends. Saturdays are my long runs, so Fridays are fun and easy, or completely off days!

Brooke’s headband is so cute! I want one for myself. Polka dots are so in (or was that last year… I don’t really keep up). I think I need to start a theme dinner with my friends at school so I have an excuse to make chocolate chip cookies/fancy desserts on a monthly basis. Running with friends is always a good time too, maybe not on hills though!

If I could eat Chipotle everyday I definitely would!! It also doesn’t help that there is one across the street from my office! I usually order a salad or a burrito but with a side of the salad dressing to pour all over my burrito, bc that stuff is my favorite part about Chipotle!!

Well thank you for taunting me with Chipotle this early in the morning :P And the worst part of all?! We don’t have any up here… But at least I can dream about my favorite chicken burrito bowls with guac, salsa, and cheese. And chocolate with peppermint wins by default because I’m allergic to peanut butter :P But change it to chocolate and almond butter and we’ve got ourselves a winner. Happy Friday!

We made a chipotle-inspired rice bowl for dinner last night! (I posted the recipe to my blog). It was delicious, but the best part was that extra guac was free :)

Chipotle has to be the best! My husband & I split one burrito and I load it with that hot, chipotle sauce.. I love how you always get together with friends. How nice is that!

I have yet to watch biggest loser this season :-/ I need to get into it!
I had a nice 7 mile easy run today. Long run tomorrow! Still recovering from my hard run on wednesday and too many lunges on monday:)
I love the vegetarian burrito bowl at chipotle – black beans, no rice. So good!
Have a great hill workout! I’ve been trying to incorporate at least one hill when I run outside, have to start somewhere:)

I DO think people are crazy for not liking Chipotle! What’s not to love?? Nuts. I always get a chicken burrito bowl with brown rice and black beans, topped with ALL of the salsas, green pepper and onion, lettuce and guac! Plus TONS of hot sauce, naturally:-)

My run today is only 4 miles…I’ll throw some hills in then I plan to hit the weights hard! Squats!!

Hmm….If I had to pick, Chocolate and Peanut butter. I’m going to make some puppy chow soon!! But with white chocolate:-)

Today turned into a rest day. For some reason I just can’t make myself get up on Friday mornings. I’m still running 5 days a week so it doesn’t exactly bother me. I LOVE Chipotle. I get the chicken burrito bowl with black beans. Yum!

Billy is indeed a crazy one. ;) My husband and I love Chipotle. I do like their burritos, but I usually end up getting a burrito bowl – brown rice, black beans, veggies, chicken, cheese, pico, and guac. Yum!

I loveeeeee Chipotle!!! Too bad we don´t have it here in Peru. I love their burritos- I always get them with chicken, beans, veggies, guac- no rice! Today was my last long run before next weekend´s Miami Marathon so I did 10 easy miles.

I actually don’t like chocolate, and people (especially women) call me crazy all the time. You may call me crazy, too, but just think of it this way: it’s more chocolate for you!

We don’t have a Chipotle :(

I’m hoping to go for any kind of run today, if I can get over to the trail. We had 9 inches of snow! The roads by my house are curvy/hilly and have no shoulder or sidewalk, so I can’t run on them when it snows for safety reasons.

Neither chocolate/pb nor chocolate/peppermint… see above answer to the first question :) Like I said, just think of it as more for you.

I get frustrated when people call Panera Bread fast food. WHAT! Their service is usually fast and, yes, it is a food establishment. BUT I would never consider Panera Bread fast food. What an insult ;)

I love Chipotle! We do not have it here, but have another place called Mucho Burrito, which I think might be better…. I do not know how someone could not love Mexican food. I think its my fav. I usually get the salad bowls with extra guac :)
No run today, its a home workout, I am thinking 30 Day Shred… its been too long.
That is the toughest choice ever. seriously my two favorite combos. I have to say chocolate and pb though, I think…

I think the better question is, what don’t I eat at Chipotle?

I sometimes hate Trader Joe’s. I know, that’s almost as bad as Chipotle but the store is always a mad house and sometimes I just think it’s overhyped. But it is super close to my house so I still pop in there a lot.

We don’t have a chipolte where I live :(. I love any kind of taco salad though. And I’m jealous you get to run hills in sunny California. Our sidewalks are so icy right now I’ve been doing cardio indoors.
Hoping my 3month old naps long enough for me to get in a workout :). Can’t wait until I can use my jogging stroller.

I actually like to get meals at this one HUGE Whole Foods near my boyfriend’s home. Some people like to do a sit-down place, but I like that we can all choose what we want from their huge hot foods area… we just have to not get over-excited because it’s all by weight!

I have never been to a Chipotle. I know, gasp. But any time we are near one there is also a PF Chang’s and I have never been able to say no to a chance to eat Kung Pao Chicken and PF’s. Can. Not. Do. It.
I was planning on just doing the 2 miles in my training plan today but it is supposed to be 60 degrees here! What?!? So I might run outside for as long as my body will allow it instead.

Brooke is just too adorable!

I don’t like Chipotle much either. I know – it’s crazy. My husband loves it and wants to eat it all the time. I just find their chicken to be a little iffy. And their lettuce to be a bit wilted.

Hopefully I’ll get a short run in today. Not much time for anything else between work and baby, but we’ll see.

Definitely chocolate and peppermint – not a fan of chocolate and peanut butter.

But you must try FREE BIRD ! Same idea, just tons more flavor. Billy will even like it, I promise. There is one in San Jose, also Palo Alto.

I have some very good news for you!! My boyfriend used to HATE Chipotle. This was especially problematic because his family goes there every Thursday night for dinner (yes, it is one of the greatest traditions I have ever been a part of). One Thursday while we were there, my boyfriend ordered something that he never had before, and LOVED it!! Now he looks forward to eating Chipotle. So, all you and Billy have to do is go there every day so that Billy can try various different combinations of their glorious food until he finds the right one for him. Problem solved!

It’s so frustrating when I go on and on about a restaurant then you bring someone there and they don’t like it :-/ I LOVE Chipotle, how can Billy?? I LOVE the little band in Brooke’s hair-she is so adorable. I see she won the sock battle again-haha! Today is my rest day, tomorrow I run 4 miles training for my 1st 1/2 marathon. I have a true hatred of mayo… I feel like i’m the only one out there, a lot of my friends avoid it for health reasons but they still love it, I have never liked it and people are often really shocked to hear it.

My goto Chipotle is the same salad as you x2 of the veggies and a giant scoop of guac

No run day :) I play soccer on Sundays now so i’ve switched my off day to Fridays… now my favourite day of the week

-I do NOT like Mexican restraunts and my friends love it. So when I’m with they have to adjust plans because no Mexican for this girl.

My husband is Chiptole-obsessed (seriously), so we eat there a lot. I typically order the same thing: a vegetarian burrito bowl. I’m not a vegetarian, but I love their guac, and it’s free when you get a vegetarian bowl. I get white rice, black beans, fajita veggies, mild salsa, corn salsa, and guac. And then I add a ton of hot sauce. It’s so good and so filling!

I don’t understand people who don’t like Chipotle (or Mexican food in general) either!! I usually get the chicken salad to try and be healthy (the huge bag of chips + salsa on the side are healthy right?), but the chicken tacos are probably my favorite.

Yummm I want that chocolate peppermint bread!!! Anything with peppermint is my fave. And everything at TJ’s is amazeballs. Chipotle is another favorite of mine. I ALWAYS get a chicken burrito bowl with black beans, lettuce, extra medium green salsa, corn and rice yummm I just had one two days ago and you’ve made me want another one asap.

I totally had Chipolte last night too.. Burrito with black beans, cheese and brown rice… If I go bowl.. Same thing. Love the lime chips. Sometimes I get a salad from a different place and buy the chips to compliment.

Slow 45 minute run..

And definitely sometimes you have to just stick with choclate and chocolate. I think I maxed out on mint everything after my Edys Brownie Mint Ice Cream phase in college.

Ohhhhhhh, it should be illegal for me to road posts about Chipotle while living in a Chipotle-free zone. In my last year of grad school, a Chipotle moved in just down the road from where I worked. Like, between work and home (which was only about 5 minutes anyway). DANGEROUS. Dang, those chicken bowls (white rice, black beans, chicken, corn & mild salsa, lettuce, cheese) are GOOOOOD. It’s 9 AM, and look what I’m craving. Yikes! :)

I am genuinely disappointed that Billy doesn’t love Chipotle! I usually get the chicken tacos and the chips and hot salsa. Sometimes I’ll get the chicken salad if I’m feeling “healthy” haha and if I’m feeling ravenous then I’ll do the burrito. I just love love love Chipotle.

Also that chocolate peppermint loaf looks incredible.

You blogged about two things I don’t live near – Trader Joes and Chipotle and I’m now craving things from both. Bummer, haha.

Chipolteeee. Have you had the dressing that comes with salads there? Sooo good. And the PB/Choco vs. Peppermint/choco debate is a TOUGH one…. I LOVE Peanut Butter more than anything in the world but I think the peppermint/choco combo wins out because peppermint-mocha lattes are heaven.

Short little run today, half marathon tomorrow– eeek!

I may have mentioned this, but here in Texas we have three different Burrito joints: Chipotle, Mission, & Freebirds. Far and away, my favorite is Freebirds because they have purple cabbage AND sauteed mushrooms to add!

Mmm Chipotle! Can you believe that I pretty much have given up going there for this year? But only because I used to crave it and eat it so often……. sigh.
