1st- Brittany!!! You emailed me about the meet-up tonight and the email address you left didn’t work so email me again so that we can figure out tonight:)  

The meet-up is tonight at 7!  Skinny Runner will be there too and here is the address:

Lunch:  3 egg omelet with chicken, cheese and pb&j on the side.  I do not come near vegetables the day before a race.

Workout:  40 minutes on the elliptical and 20 minutes on the bike and without my iPad I think I would have died from boredom.

The rest of my Saturday until Billy gets home from school is devoted to finding the all-time best chocolate chip cookie recipe in the world.  If you have any leads on where I can find this recipe please let me know.

I worked the overnight shift, so I just woke up. But I lit a scented vanilla candle before I went to sleep — my house smells amazing!! Getting geared up to go for a beautiful fall evening run.
I’m definitely on the avoiding veggies pre-race bandwagon. And I totally hear you on the cross-training boredom — especially when you just want to run with every fibre of your being. ;) Save it for tomorrow! Run fun!! :)

I believe you shluodn’t ask people how they want your blog to be. People will always give you a rational analysis and explanation on how they would react to this or that, but the real reaction will be emotional. My advice is: Try! Do it and collect feedback on what you’ve done or you’re doing. Not on what you’ll do.And yes, I miss your posts.

Hit up the pumpkin patch- just threw in my first batch of pumpkin cookies and then heading out for my run before the sun goes down. – I hope I make it! Luckily these cookies cook fast! As for chocolate chip: hands down the BEST recipe is the one found on the back of the Nestle’s Toll House chocolate chip bag- (you can google it too). Just replace the butter with a stick of Crisco and your life will be forever changed. -and I’m not exaggerating…

My Saturday is unfortunately dedicated to a day off labwork. :( Come December I’ll have my master’s degree and be done though!

Sorry, I have to chime in here and say I second this for the world’s greatest choc chip cookie recipe! It is my most requested treat of all time and the pudding makes all the difference. Plus you can play with it and throw in candy bars chunks or use different flavors of pudding. I haven’t tried it with half shortening/half butter…just all butter, but they are AH-mazing. The key is to take them out of the oven just barely undercooked (maybe just a teeny bit of brown around the edges) which is 10 minutes for me with a 1 Tbsp cookie dough scoop.

i really like the new york times choc chip cookie recipe but it’s a bit overly complicated so i simplified it a bit. they turned out just as good. this is my version:

Yield: 50 cookies! This recipe can be halved fairly easily.

Time: 15 minutes of prep, 3+ hours of waiting! 15 minutes baking time.

INGREDIENTS

3 1/2 cups all purpose flour
1 1/4 tsp baking soda
1 1/2 tsp baking powder
1 1/2 tsp course salt
1 1/4 cups butter
1 1/4 cups brown sugar
1 cup + 2 tbsp white sugar
2 eggs
2 tsp vanilla
chocolate chips/disks (white, milk, semi-sweet etc), skor pieces, as many as you prefer
INSTRUCTIONS

Whisk together the flour, baking soda, baking powder, and course salt. Set aside.
In a separate bowl cream together the butter and sugars. I don’t have a mixer so I soften the butter a bit in the microwave.
Stir in the eggs and vanilla.
Add in the flour mixture. I do it in several phases to minimize mess, since this recipe makes quite a lot of dough.
Add in your chocolates chips/disks and candy pieces
Cover the top of the bowl and put it in the fridge for 3-4 hours.
Preheat oven to 350º F. Pry off chunks of dough and roll into 1″ diameter balls and bake for 15 minutes.

Hi Janae! I love the pic Billy took. So cute. Congrats on your half marathon last week. I have read your articles but I haven’t been able to comment. I had to share this. I followed Hal Higdon’s Novice 5k training program. I have raced in a year and haven’t been able to run until about 7 weeks ago. I ran my first 5k since last year this morning. I set a new PR 28:04. Knocking a minute and 6 seconds of my last PR. I so wish I lived where I could meet up with the girls tonight. Have fun!

I saw on Pinterest that if you replace the baking soda in your cookie recipe with corn starch it makes them super soft and chewy. I gave it a shot and that combined with slightly under baking them made for a most delicious treat. I use the recipe on the back of the chippets bag.

I was just curious, since you don’t have vegetables before a race does that also mean you don’t go near fruits the day before a race as well?

My food blog has a good one. It uses gluten-free flours but is adapted from a regular flour recipe. My family says that with or without gluten, the cookies from this recipe are the best.

I have 2 recipes that I use, but my secret weapon is I melt the measurement of butter on the stove. Not in the microwave, the stove top, old school. I don’t know why but I feel like the melted butter makes the mixing easier which doesn’t create the need for as much mixing which means they are just the right consistency. This may all be in my head…but seriously don’t melt in the microwave. That is my chocolate chip secret and most people seemed impressed!

Above is the recipe to my best ever chocolate chip cookies. Even better Janae are the pictures, you’ll see I added mint and green food coloring to make them into these mint chocolate chip ice cream sandwiches…so so good. Just read the notes if you make them to make sure and drop the mint, food coloring and add the vanilla as directed. Let me know if you do!

FINALLY!

Aunt Gina’s Favorite Chocolate Chip Cookies

Cream Together:
2 cups butter
2 cups sugar
2 cups brown sugar

Mix Together:
4 cups flour
5 cups oatmeal (use blender to ‘powder’)
1 tsp salt
2 tsp baking powder
2 tsp baking soda

Add:
4 eggs
2 tsp vanilla

Mix together all ingredients. Dough is ready to add any or all of the
following: 24 oz chocolate chips; 8 oz grated chocolate bar; 3 cups
chopped nuts

Bake on ungreased cookie sheets. Make golf ball sized cookies, set
2” apart and bake at 375 degrees Fahrenheit for 15 minutes. Makes
112 cookies. Enjoy!

I use 2 bags (11.5 oz) of Ghirardelli milk chocolate chips. This makes a big batch and so I use a stand mixer. My hand mixer wasn’t strong enough for half a recipe but the recipe itself halved just fine. I use a cookie scoop for uniform cookies, think small for less guilt ;-)
