Something Returned… Hallelujah

It is a beautiful thing because my appetite has returned.  There still isn’t as much room in my stomach but for a few weeks I was worried about who I had turned into when food just wasn’t as delicious as normal.  Do not be alarmed because as of yesterday food tasted like the good old days and I was too busy eating to write an afternoon post so we shall start from the beginning of the day.

Another tough 7 miles but I am going to stop telling you that they are tough because I figured out that for the next 19 days my runs are just going to be tough and that is normal.  It is called there  is a 9+ month baby in my stomach which makes running a little difficult but at the same time it is what keeps me sane.

For breakfast my cutest Megan got coupons for us to go to the Corner Bakery to go try her favorite oatmeal for FREE.   PS Megan ran 17 miles before meeting up with me, rockstar!  I can’t even comprehend doing that anymore but I am crossing my fingers that the addiction for double digit runs comes back.

They called it ‘chilled oatmeal’ which I am assuming is what all of the blog world eats known as ‘overnight oats.’  You guys are on to something because that was heavenly.  Somehow we ended up with four bowls for two people.   There was a ton of cut up fruit and almonds mixed in the oatmeal with sides of raisin bread toast, best breakfast ever.

Next up was a bridal shower for my cousin, that is getting hitched soon, complete with games to see how well they knew each other by filming his questions and answers earlier on.

Photo 1 1

Poor boys sure miss out on the amazing food at bridal showers and baby showers.  On my fourth trip back to the fruit and yogurt I thought of the best idea and grabbed a cup to build a personal parfait.

Photo 2 1

At this point a nap was needed.  How do I know when I need a nap?  Billy will ask me, “Nap Time?” but his tone sounds more like a PLEA for me to take a nap (because I get a little grumpy) rather than a question.

Have you ever been to a fish fry?  Me neither until last night.  Our amazing friends had us over for what I can honestly say was the best dinner I have had in F-O-R-E-V-E-R.  They fried the mahi that they had caught from their last fishing trip and we turned them into fish tacos.

DSC 3101

Fruit with dip, spinach salad with almonds, poppyseed dressing and fried wontons and my first of many tacos.  They even had a secret white sauce and freshly made salsa to top it off with.

DSC 3103

No fish fry party is complete without s’mores.  That isn’t actually a rule but I think it should be.   They reminded me that I need to make my s’mores bars asap!

Photo 4 1

I may have the title as the ‘worst marshmallow cooker in the world’ and so I always make Billy toast mine.  I am very specific with the exact consistency that I want my marshmallow for my s’more and once again Billy delivered greatness.

Photo 5

I warned Billy on the way home that he is going to experience a small (or very large) tantrum from me when we move away from all of my Utah people.  He better be prepared.

—————————————————————-

Have you ever had overnight oats?  How do you prepare it?  I need to know the best way to replicate what I ate yesterday!

How do you like your marshmallow for s’mores?  Just a little melty, golden brown or a little bit charred?

What was your long run this weekend?  Anyone race?

Question inspired by Billy’s ginormous watch above… do you wear a watch?  Regularly?

I like really melty marshmallows with my smores. Do you guys have Celebration cookies in Utah? They’re a graham type cookie with chocolate on top (usually with a stamp of a castle on them) and I use those because the chocolate stays on them and it’s easier. And delicious!

Reply

I have never heard of Celebration cookies but they sound incredible, I must try them asap!

Loooooove your friends braid!!!! I did a 9 mile run on Thursday but I’m only 25 weeks pregnant, yet that was hard for me to even do so I couldn’t imagine trying to get 10+ miles in anytime soon! I did 7 on my own then made my brother run another 2 with me haha. It’s crappy here today so I’m going to just do a treadmill run and watch trashy tv!!!!

Reply

GIRL…. you are absolutely incredible! Seriously, 9 miles at 25 weeks, way to go! Enjoy your treadmill run and trashy tv:)

At the last fish fry we went to, we also fried twinkies and snickers! The snickers didn’t turn out right, but the twinkies were amazing!

I make overnight oats with a container of greek yogurt, 1/3 cup of milk, 1/3 cup of oats, chia seeds and 1 tablespoon of peanut butter. It is a stick to your ribs kind of breakfast!

Reply

I want to try fried twinkies, that sounds really good! YUM…I will be trying your overnight oats. THANKS LAURA!

Reply

I love the Corner Bakery!! I’ve had their spinach strawberry salad. It’s soo good! I think s’mores should be part of any outside cooking activity.

Reply

I saw that salad and really wanted to try it, next time I am going to have to!

Reply

I like my marshmallows in that in-between stage of perfection. Not charred, but still golden brown and gooey!

Glad that you have your appetite back!! I can’t imagine reading your blog without seeing pictures of all of your delicious eats! ;)

Reply

ME TOO… it was a scary time! Hope you are having the perfect Sunday Kristen!

Reply

Girl…. 7 miles being 9 month pregnant… you and baby hrg are rocking it! I’m not going to be suprised if I pull up your blog after you’ve delivered and find out your little girl stood up and ran right after birth (skipping all that laying around, crawling, walking stuff). :o)

I’ve never had overnight oats, but I am going too. I just can’t handle packets of instant oatmeal anymore. I had some yesterday I thought it was gross, whish is weird because I use to love it. hmmm.

My marshmallows need to be just a little melty. I don’t really like any brown on them at all. P.S. best smore ever is graham cracker, a pb cup and marshmallow.

I take the weekends off of running. But, today I am going to do a quick 3 miles while the hubby is out golfing.

I never wear a watch, but I bet people wish I did because I’m always asking what time it is.

Reply

You are so sweet thank you so much Karla and wouldn’t that be awesome if she started running right away. I go through phases with oatmeal too and sometimes I hate it! BRILLIANT with the pb cup, I like the way your brain works. Enjoy your 3 miler!

Reply

I too like cold oatmeal, but have never done overnight oats. I just make the packet oatmeal, put in the refrige and eat when cold.
Ran 10 miles yesterday, and had/have a mystery pain in my left femur. OH NO!!!!! Did not even show up till I was taking my shower.
Happy Sunday!!

Reply

WAIT…WHAT? Your left femur hurt after your 10 miles? How is it feeling today?

Reply

Better, but it is a different ache than muscle soreness that’s for sure. I HOPE it is a nothing. Today is a rest day, I am not even going to test it. Probably going to take another rest day tomorrow. If it is a worst case senario an injury you can give me all your tips for coping, including sending a batch of those coconut cupcakes!

Reply

Good call on taking two rest days! I hope it isn’t anything serious! Please keep me updated and I am always here!

Reply

I do 1/2 c oats, 1/4 c yogurt and top w/milk until slightly ‘soupy’…add in whatever fruit, pb, flax, etc in the morning, soooo good!

Always have the marshmallows burnt, I don’t have the patience to get them golden brown.

I ran my own HM yesterday since I am taking a break from running (hopefully for not too long!)

Reply

YUM, I will be trying your combo! Wait a second, you are taking a break from running or from racing?

Reply

Both:-( AF has not returned since I had my baby 2 1/2 years ago, I have tried cutting back running, eating more fats/protein, etc. Laying low on running for now–time for some strength training (ugh), yoga and walking…sounds like fun, no? (I am trying really hard to have a positive outlook on this since dh and I really want more kids)

Reply

I ran a sunset 5k this weekend and ended up not being able to get my 8 mile long run in for the week. :/ It kind of stresses me out, but hopefully I can get back in it this upcoming week!
Btw, I felt like I needed to tell you that I had a dream last night that I met you! I know that’s probably the creepiest thing you’ve ever heard, but even in my dream I was like, “omg, you’re hungry runner girl!” haha I obviously LOVE your blog!

Reply

That 5k sounds amazing! Don’t worry about missing your 8 mile run, I swear training plans have the fact that we will miss a long run or two tailored into them. AHHH that makes me so happy that I was in your dream. You are so sweet. Have an amazing Sunday!

Reply

How funny you should ask!! My post this morning is my favorite recipe for overnight oats…..check it out. http://www.hungryhealthygirl.com/2012/08/05/powermeal-and-the-perfect-oats-for-summer/
I wear a watch, but it’s mostly for decoration. ;)

Reply

I love your Powermeal Sunday idea. So cool! Those strawberry overnight oats are calling my name. Thank you so much for posting it!

Reply

well done you-love ‘overnight oats’ as you called them. I go through phases of when I eat them ALL the time and times when I don’t. My ‘long run’ (!) today was 4km….the longest run this week. Holidays!

Reply

I go through oatmeal (hot) phases all the time! WAHOO great job on your 4km!

Reply

man-but just watched the womens marathon-amazing! Shame Mary (Kenyan) just missed out. Your Flannigan did well though.

Reply

AHHH I haven’t watched it yet so I have to skip this comment:)

Reply

I only seem to crave overnight oats in the morning- so yum! The key is definitely chia seeds: they add such a great, thick consistency!

Reply

Good call on the chia seeds! I will be throwing those in!

Reply

I love overnight oats during the summer, and they’re super easy! I just put together the oats, cinnamon, chia seeds, sometimes a little protein powder and/or pumpkin, and milk. Stir it up and put it in the fridge until morning, then add a little more milk and the toppings! : )

Reply

I didn’t think about cinnamon! Good idea! Thanks so much Danica!!

Reply

no problem!

Reply

I have had over night oats (bc of the blogs all talking about them) and I am just not a huge fan. I love my oats warm:-)

I actually got to run this weekend! My xray on Friday came back perfect. I have to start reallllly slow so I did 2 miles yesterday. I am going to do it 3-4x this week (depending on if my foot is sore) then start taking it up by the 10% rule. No timing myself! I’m SO excited.

I catch my marshmellow on fire then blow it out. I saw something the other day you might love, you use a reese cup instead of a piece of a hersey bar.

Reply

AHHHH I am so happy your xray was perfect. Congrats on the 2 miles, that is the best feeling ever. YES, follow the 10% rule and get rid of the clocks! ENJOY your runs this week:)

Reply

I love overnight oats! Mine are so simple and boring – strawberry Greek yogurt, almond milk, oats, and chia seeds mixed up and refrigerated overnight.

All your food this weekend looks great – I’m craving tacos now!

I love my marshmellows golden brown and the only time I like marshmellows is in a smore!

Reply

YUM.. I am trying your oavernight oats. Thanks so much Heather. I think you NEED to have some delicious tacos today!

Reply

During the Lent season, fish fries are extremely popular. There are a lot of churches that have them every week, and they are always so good!

Reply

That is AWESOME!!!!! We need to do that here too because I am going to be craving them like crazy! Hope you are having an amazing day Lori!

Reply

I have never had a s’more before. :o

Reply

I love oats but they so not keep me full. I feel like that was a confession! Even with Greek yogurt or another protein I’m hungry a couple hours later. However, one time I put the remnants of a jar of marshmallow fluff in my oatmeal with a few chocolate chips and omg soooo good!

Reply

My fave way to make overnight oats is to make “pumpkin pie” overnight oats. Oats, pumpkin puree, sweetner of choice, nutmeg, cinnamon, ginger and salt. Mix together with milk and vanilla. THEN, the best part, top with greek yogurt of choice in the am (I usually take plain greek yogurt and mix in splenda, coconut and vanilla). It’s dessert for breakfast! And so filling!

Reply

I’ve had overnight oats and loved it, but always forget to make them the night before! you’ve given me a taste for them though.

I did 9 relatively easy miles, apart from the hill, yesterday and then dashed back to my visiting parents!!

And I NEVER wear a watch apart from when I run.

Reply

Ok, so you may want to take your friendship back from me when I tell you this…butttttt…I don’t like marshmallows. I actually hate them. :/ Eek! Hope you don’t disown me now ;)
I’ve never been to a fish fry, but with all of that food & friends it sounds like a perfect night!!
I’m glad your appetite has returned, mine is diminishing…I know what you mean about your stomach just getting smaller…with this little lady pushing on it. I just get full so quick. But I’m hungry more often, so I suppose it all balances out :)
Have a great Sunday, not sure if you watched the marathon this morning, but if not, I hope you enjoy it later today- it was awesome!! :D I totally see you there in a few years!

Reply

I keep trying but I can’t get into overnight oats … maybe I am doing it wrong?
I love s’mores though! I usually make mine extra burnt, but it’s partly because I am lazy and want it done quicker, ha!

Reply

I like my marshmallows golden brown, but definitely not charred or burnt! Hope you have a great Sunday!

Reply

Never had overnight oats, do they taste different than oatmeal??

I love my marshmellows charred :) I love burnt food hahaha but I will take a marshmellow anyway :)

7 Mile run in 60 minutes :D I was so happy!!! I think you’ll bounce back to your normal double digit runs quickly :)

I wear a watch when I’m in class, I need to know what time it is, you know ;)

Reply

I did a 8 miler and it felt great. It was on the slower side of my easy pace but it felt great getting those miles under my legs. I’m going for double digits next week and I’m so excited.
I only wear a watch when I run or when I’m doing nursing clinicals.
I can’t believe your little one is almost here! Enjoy.

Reply

i love overnight oats! i use 1/2 c of oats, 1/2 c of greek yogurt and a splash of almond milk. in the morning, i add fruit, cereal, coconut or sometimes chocolate chips! for some reason, i cannot eat hot oatmeal but i love overnight oatmeal!

i love my s’mores perfectly toasted but i don’t have patience like my sister does, so i end up usually eating mine burnt;)

my long run was 3.10 miles….whoop, whoop! i have no idea how you can run 7 miles while being pregnant, thats just awesome!

Reply

Yay! I ran in my first 10K yesterday and it was a great experience! We ran at Soldier’s Trail in Flagstaff and it was very hilly for the first three miles. I was SO glad I didn’t look up the terrain/hills on the trail ahead of time because then I wouldn’t have been able to sleep the night before…
This will be a “Fall of Firsts” for me – first 10K, first sprint triathlon, and first half marathon. Can’t wait!

I have never tried oatmeal the way you described it. I’m off to read the posts people wrote to see if I can get the recipe!

Reply

I’ve never had overnight oats, I don’t think I can plan a meal that far ahead!!

Today I’m running my first 20 miler (gulp!) preparing for my first marathon in 5 weeks from today (another gulp!)

I DO wear a watch all the time, and my wrist feels weird without it! Haha I had to go back and check – and that IS a big watch Billy wears!

Reply

When you guys move to California you have to go to The Counter in Santana Row…. You may have been there already but you can make any type of burger you want! I went the other day and my friend and I split a S’MORES MILKSHAKE!! I couldn’t believe how amazing it was!!

Reply

I think it’s amazing and so awesome that you are still running so close to your due date! Nice job mama! Yesterday hubs and I ran a sandy, hilly 10k trail race where I got 3rd in my AG :) But the best part was that it was our new annual tradition of racing 2 trail races against eachother a year and I beat him! Actually, the best part was having a date that was something other than dinner out :) So fun! Not sure how to make overnight oats… I made some by just letting them hang out in yogurt overnight, but not sure if that’s what the “real” overnight oats are?

Reply

Ok this is super super important when making overnight oats…
make sure you add lots and lots of pumpkin, your tummy will thank me :)

Reply

Your friends and family have the best food at get-togethers!

I don’t like overnight oats because I like mine hot, but I do like OIAJ (oats in a jar).

Reply

I had overnight oats once, but I won’t tell you how I prepared it because they were disgusting. I wanted to like them because I always want to do what the cool kids are doing. But no. Bad. :)

Reply

YAYY for the return of your appetite!! :)

good call on the parfait at the bridal shower! i’m gonna have to remember that one when there is a plethora of fruit and yogurt, since it gets pretty messy trying to use a plate! ha!

ohmygosh, fish tacos are one of my all-time favourite foods EVER, if not my fave. they look DELISH!

i searched pinterest for overnight oats, and made them a few ways. i cooked steel cut oats one time and mixed them in a mason jar with a layer of greek yogurt, milk, cinnamon, and fruit and they were sooo good! but then i found out you’re not supposed to cook the oats? so i also tried them with regular quaker oats (uncooked) and milk and greek yogurt and peanut butter and cinnamon. also good! i say experiment and find what you like best! i personally like to mix it up a bit. :)

marshmallows are a must whenever a bbq is happening!! it’s a shame to let those coals go to waste ;) i loooove my marshmallows to be golden brown on the outside and yummy and gooey inside. mmmmm. no burnt parts, please!

Reply

I love to get my marshmallow good and burnt in a s’more. It must catch on fire (and be blown out, of course) before I will eat it. I want one right now.

Reply

I like mine a little charred…but that’s with anything I eat that’s coming off the grill. I like my stuff a lil burnt, lol. My long run was 16 today and it was disgusting…hot and humid and I didn’t like it, hah! I do wear a watch regularly…I feel naked without it. Glad you’re getting in some good quality time with your friends before you move away…it’s hard moving!! Also, amazing job in getting a run in…you’re a rockstar doing that soo close to your due date, lol.

Reply

You are s great. I love hanging with you :) And talk about a busy day for you! Good to know I wasn’t the only one that left our breakfast and ate more ;) I met our friends at the splash pad, then met my family for lunch, then made cinnamon rolls for my neice’s baby blessing today.

I am so glad you liked the oatmeal! I wish I were eating the strawberry one right now!

That fish taco looks so good. I should have just hid in your car and ridden with you there and made myself one. That wouldn’t be weird at all! And smores are delicous. I like my marshmallows brown, but not burnt.

I own a few slap watches. Cause, you know, I am 12 and/or stuck in the 90’s.

Reply

Now that’s a good weekend to get your appetite back for! I had 10 miles this weekend, it was a “cut back” week. The fact that 10 miles is taking it easy scares me a bit… haha

Reply

I eat overnight oats all the time (especially during the spring when I’m still teaching and have little time for making breakfast) – I use oats, plain greek yogurt, chia seeds, vanilla stevia drops, almond milk, and sometimes a few other things just for different flavors. In the morning, I add some more milk to get the consistency I want and usually top with some type of nut butter or jam. It’s awesome and filling.

I can’t even try to count how many times I’ve been to/hosted a fish fry. We have them all the time in TN!

I like my marshmallow golden-toasted all the way around. Perfection.

Reply

Your day looks awesome. I’ve never had overnight oats, but the thought of cold oatmeal sounds kind of awful to me.

I love bridal showers so much. They make me a little jealous, though. I saw people headed into a bridal shop yesterday and was like, “I remember that!!”

Reply

I made overnight oats once after reading about them all over the blogisphere, and ended up sick throughout the rest of the day and the next day. :( I’ve not made them since, even though they always look so good.

The perfect s’more is definitely made with a perfectly golden brown marshmallow, but I also really like burnt marshmallows!

I ran 9 miles yesterday and ran my fastest 5K and overall training run ever! I definitely NOT a fast runner, but I was really proud of my accomplishment!

Reply

I’ve made overnight oats only once ever, but thanks to these suggestions on here, next time I’ll add in a cup of greek yogurt. All I did was almond milk and oats and then added fruit in the morning. Eh. My friend said Quick Oats are the key…I only have Rolled.

I know it’s blasphemy, but I’m not a smores lover. I made them a ton in Girl Scouts. Nothing is better or more fun than setting your marshmallow on fire! I do enjoy graham crackers crushed over my froyo!

We did a 4-mile bike ride to the trail, 4-mile run and 4-mile bike ride home on Sunday and we both thought we were going to die. A slight hangover might have had something to do with that. But I will primarily blame the ridiculous 90% humidity we’ve had this week. UGH, it’s like being wrapped in a wet blanket!
