‘Healthy’ Nachos and I Am Growing Up

January 9, 2012

After church yesterday we had the ultimate lazy day.  There was sleeping on the floor, we watched the first season of ’10 Items or Less’ and ate nachos.  Billy is a genius in the kitchen and whipped us up the best batch of nachos ever.  Jalepenos, cheese, brown rice, black beans and chicken…..definitely means it is healthy with ingredients like that.

After the thirteenth nap of the day we went up to my Aunt’s house for a b-day dinner for my sis and neice.   Ham, rice, rolls (I brought those, I have no idea how they got so smashed), jello and salad with ranch dressing.  My Uncle is obsessed with ranch dressing and no other dressing is allowed, everything tastes better with ranch, everything.  My mom makes a glaze for the ham that is so good and all it is is brown sugar and mustard mixed together!

the coolest new bike.  I think her new slippers will make great riding boots.  Part of our present to her was a bag of swedish fish….this is a sign that I am growing up because I was able to part with them and give them away.

My sis got the Garmin Forerunner 110 and is so excited.  She is quite the runner!

My family never skimps on dessert and makes sure there are 8 choices each Sunday so that everyone is happy.  Lucky for me I am not picky.  Except for fruitcake…that is one dessert I will never understand.

I am pretty sure I would enjoy Cinnabons cinnamon rolls even more if the part with the actual bread was just frosting…..yes, I could eat bites of pure Cinnabon frosting and not suffer the consequences of an upset stomach or a headache.

How else do you think I have the energy to get up every morning and pound out some miles before I teach high school all day long?

Oh my lord those Cinnabon’s look amazing. I remember my dad always used to bring one home for me when he worked in Denver. If I could have one delicious food in front of me right now it would be a big bowl of Cocoa Goodness granola + almond milk. My current favorite salad dressing is whatever goes on Panera’s Thai salad. Some workout songs I’m loving lately are Dance A$$ by Big Sean and On to the Next One by Jay Z (throwback). :) Fruitcake is something I will never understand either.

Okay dumb question- did that bowl on top actually have nachos (the brown rice is dominating ;))! Either way, you’ve spurred a huge Mexican craving! And totally didn’t realize you taught high school (I thought you taught younger grades)–> my respect for you has multiplied! I am craving Fajita chicken and rice right now…in a bad way! As for dessert that baffles me: panna cotta–> it has such a slimy texture!

Now that you said mango – that sounds so good! I went through a mango phase over the summer. Errr, I dont listen to music when I workout! Crazy person that I am, I dont know why I don’t??? Can’t be any help there. I will NEVER understand that fruit ambrosia stuff. so so gross.

I could really go for some coffee cake right about now. I was just on Great Harvest’s website and they had a coffee cake on there that literally made my mouth water. My favorite salad dressing hands down is Newman’s Own Light Italian. I put it on everything!

I am with you too. I counted last night and we currently have 8 different desserts in our fridge. My favorite is are the cupcakes from DC so I might hoard those into my room! ;)

My favorite salad dressing is that ginger stuff they give you at most sushi restaurants! I want to find it elsewhere-I hear target has it.

whoa, way to go Billy on the Nachos!! Those look DELICIOUS and actually do sound healthy too! did he use pita chips? even better. I’m actually not a fan of ranch dressing, I’m a caesar girl through and through. I’m with you on the desserts though – there is NOTHING like huge fingerfuls of Cinnabon frosting! I kind of like it better when it’s been chilled in the fridge and gets kind of hard. Weird I know.

have you ever had HOMEMADE fruitcake! you would love it bc it has so much candied (candy) fruit–so delicious! –in it! Happy Belated to your niece and sis. My husband is a principal-elementary school–you guys would get along great–It was the BEST treat he brought home for the holidays–you know all the kids bring him gifts and home made stuff their parents made. That fruitcake was the BOMB. e

Ohh lately I’ve been turning on “Watch the Throne” by Jay Z and Kayne and just running through the whole album. But there’s a ton of curses in there so maybe not class appropriate? My spin teacher does a hill to “5 O’Clock in the morning” by Lilly Allen and Wiz Kalefia (sp?) and it’s awesome. Great hill song!

Frozen yogurt please! There are no fro-yo places here so I haven’t had any since we were south in September, only another 6 weeks before we go south again and I can get my fix ;)
My hubby just picked out a new dressing, ginger soy and I really like it, usually we just stick with balsamic vinaigrette.

I was at the airport yeaterday and could not walk away from the Cinnabon. It was so good.
A lot of my friend’s kids are pre-selling Girl Scout cookies, which I think is just cruel. Now Ill be thinking about them for the next month until they arrive. I have two dealers and may have spent 1/2 of my food budget on cookies.
I don’t get pumpkin pie. I’ve tried to, I really have.

I have wanted a plate of nachos for the past week and haven’t made them- why? IDK but I wish pictures could magically come alive and pop out from the computer- those nachos are what I’m wanting right now ;P Or a slice of banana bread… Total opposites but my banana yogurt bowl this morning has left me with a craving for more bananas!

BTW, current fave salad toppings are salsa and tomato sauce- not technically dressings but add great flavor!

Dessert would definitely be cheesecake. I know I’m in the minority with this one, but I loathe cream cheese, so a big pie of that? Barf. I will say a lot of the varieties LOOK good, but once you tack cheesecake on the end of the name, it’s as good as dirt.

I have started using guacamole or hummus as dressing instead of my usual balsamic vinaigrette. It rocks!

I would take lots of fruit – it’s early, I can’t eat not breakfast foods for breakfast.
I tried that salad dressing that you love from TJ and while it was really good, there is this other one that my husband bought that is a raspberry one that’s amazing!
A workout song that really makes me literally pump my fist is ET by Katy Perry. And lastly, anything with jello.

I think I would like to have some sushi right in front of me! I know it’s only 9 in the morning, but I can eat sushi anytime!

I can’t really think of a dessert that I hate. It used to be fruitcake, but then I had a “real” fruitcake and it wasn’t all that bad. Bubblegum ice cream is the only dessert I can think of that I loathe – I hate bubblegum flavor! :)

I can barely take a bite of a cinnabon they are SO sweet!!
But then I sit here and think about what I’m craving and it’s greens. Not the dark leafy ones, but a juicy heart of romaine or a little gem. Drizzled in a chilli-orange-honey dressing. I have to point out this is not normal. On a normal day I might be craving the Lindt chocolate bar with the coconut filling… :)

Cheesecake is a total mystery to me! The texture, the smell, the everything – just not into it.

No particular song is coming to mind, but for inspiration, I love Spotify because it shows you what all of your fb friends are listening to and all of my friends have way hipper taste than I do and always know what new hot jams I should be checking out!

I brought to the office today a large pan of ghiradelli triple chocolate brownies with added chocolate chips and peanut butter m&ms, so that’s what I’m craving right now. My husband and I put ranch on EVERYTHING, including our pizza. As for workout songs, Rihanna’s “We Found Love” is one of my current faves.

i’m a fellow spin instructor, and i’ve found that anything by pitbull, rihanna, and flo rida is PERFECT for class–especially jumps and standing runs!

Wuevos Rancheros. I had them once at this place in Northern CA, and they were magical. Or a breakfast buritto from a place in Long Beach. Clearly any type of South-western breakfast.

Maroon 5, Moves Like Jagger. I can’t get enough of it while I am out running! It’s great for hill climbs because it has a good beat that isn’t TOO fast, but it is perfect to push it!

Favorite dressing is Bolthouse Farms Yogurt Ranch… I LOVE ranch dressing but wouldn’t eat it until I found this!
Favorite Workout song: N***as in Paris by Jay-Z and Kanye.. legit I want to run just to that…. gets me so pumped!
dessert I dont understand is fruitcake as well…. and also cakes with marzipan frosting.. marzipan is GROSS

We had nachos this weekend too! Last summer my husband figured out if you used a ziploc with the end cut off – you have a perfect topping delivery device, so every chip has a little of everything.

I love Shake it Off by Florence + the Machine right now, I listen to it over and over again!

I love the Newman’s Own raspberry vinaigrette dressing on my salad! So yummy!

Workout song…oh that’s a tough one…I like the Pitbull song “Shake Senora” – or something fast and catchy for spin class. Or the T-pain song “Booty Work”. My friend teaches spin too and she plays all hip hop and rap music – I call it crunk cycle. Nothing like some good music to keep you moving on the bike.

I don’t really understand fruitcake either. My mom loves it. It’s such an old school dessert.

I would love to take ur spin class! I bet you have a lot of energy in your classes.

I agree with your uncle–ranch dressing is my one and only true love <3. I like to warm up to "Blessed" by Brett Dennen because it makes me grateful to be able to workout instead of grumpy that I'm up so early. And I really like LMFAO's "I'm sexy and i know it" because it when he goes "uuhn, i work ooout" it cracks me up:)

I miss mexican food. We don’t have any good places here in Maui :( Also, house of yogurt in Costa Mesa… best cake batter fro-yo eva. I usually mix olive oil and braggs amino acids for my salad dressing. Currently I really like Britney Spears I wanna go and Kesha Tik-tok :) Dessert I’m always bummed out on– anything custardy. gag ;)

Tell ya sista that Garmin is awesome and Ive heard the owners of the 110 are on average better looking, cooler and more fun than other Garmin users… (guess which Im rockin’?)

If I could magically have one delicious food of my choice in front of me at this moment, I would have… Mushrooms. I do actually have them in my fridge, but Im well lazy.

My fave salad dressing is honey and lemon.

Fave workout song at the moment is ‘if you wanna get with me theres some things you gotta know, I like my beats fast and my bass down low’ etc etc

I don’t get people who love tiramisu. I think the texture and taste of tiramisu is GROSS. I also really dont like marzipan things.

I am loving the Foster the People album. Doesn’t seem like it would be good workout music, but surprisingly it is!! Anything by Benny Benassi is awesome too.

Dessert- Carrot Cake. I can’t get over it. Who wants veggies in their dessert? Not me! They don’t make broccoli cake and they shouldn’t make carrot cake. Its just WRONG.

I am so sad that I ate the last mandarin. They are so sweet and juicy and I want more! My current favorite dressing and raspberry vinaigrette, I am pretty picky about dressing.
Your niece is adorable. I remember when having $20 made me feel so rich. Those were the days…

I am kind of obsessed with the new Will.I.Am song “T.H.E.” Unedited version is pretty inappropriate…but even the edited version is awesome because of the beat.

I just cannot wrap my head around why people like key lime pie….blech!
