Healthy Lasagna and Motivation

Look at us go.  Not eating out on a non-school night and making something healthy(ish).  My sister apologizes for the half-smile, she says she was hangry.

Sister’s Health(ish) Lasagna (added bonus is that it is ridiculously easy and vegetarian):

1 box whole wheat noodles

1 jar of Chunky Garden Combination Ragu Sauce

16 ounces of low-fat cottage cheese

2 cups shredded mozzarella cheese

A big bag of frozen California Style Vegetables (you can use fresh veggies too)

Cook the noodles according to box instructions.  Combine the cottage cheese and mozzarella cheese in one bowl and the sauce and veggies in another.  Layer sauce, noodles, cheese mixture, noodles, sauce mixture etc.  Back at 350 degrees for about 25 minutes or until cheese is melted.

Sorry, I don’t know if it is possible to make lasagna look pretty unless you are Olive Garden.   This was round one of three for me.  Sugar snap peas are also quite addicting.

We also had another yonana treat after dinner.  Money saved in 2 days of not eating fro-yo=$8.

My quick health(ish) meal is a bowl of brown rice, sauteed stir fry veggies (typically frozen since I have them on hand most of the time), shrimp and a tad bit of teriyaki or stir fry sauce of choice. Mix all together and it’s like healthy chinese buffet in a bowl. I usually eat this at least one night a week!

I love sugar snap peas! Such a delicious snack!

One of my favorite healthy side dishes is homemade sweet potato fries. Just slice, toss with olive oil and salt, and roast on a cookie sheet until crispy. Dunked in tons of ketchup!

I’m motivated to get to the gym because i know after Jan 1, it’s going to be crazy in there!

I love cottage cheese on my salad! Or plain with blueberries mixed in…ha ha.

I love putting peanuts in my cottage cheese. I don’t do the fruit thing. Also I prefer ricotta cheese instead of cottage cheese in my lasagna.

Ugh trying to resist workout out today, although I might to weights and pylo later that doesn’t involve putting pressure on my stupid hurt foot. I just want to RUN! Haha especially since I just finished the book Born to Run. Have you read it? If not, you should!

My beast mode is not on today – I’m exhausted! It’s my first day back at work for the week and I’m already looking forward to the weekend. But this weekend, my beast mode will be on, as I do my feetie pajama 5k! It’s not a sanctioned costume race, but I’m making it into one! Boom.

My favorite healthy recipe is Spaghetti Squash Lasagna – TRY IT.

My mom is motivating my workout today – she’s coming over later and we’re getting a couple of miles in. She has been having some tenderness in her knee and my foot is still acting up, so we’re taking it easy today. If I get out of work at a reasonable hour, I will probably do a video too.

I love cottage cheese mixed with strawberry yogurt. Call me weird, it’s delicious.

That’s very similar to my mom’s lasagna recipe! (hers doesn’t have the added veggies, but I think i’d like the added veggies even better!)

Cottage cheese is good mixed with everything. I am testing the waters to see if I can eat dairy again, so i’ve been having Lactaid Cottage Cheese this week with cinnamon and pumpkin!

hiiii girl!! i saw your comment on my blog and i miss you!! i’ve been keeping up with your posts but havent gotten a chance to comment yet (work and life are just insane) never fear, my new years resolution is to throw myself back into blogging. my christmas was lovely, i got an amazing set of headphones that are GREAT for running, so it makes me look even more forward to my workouts now ;) (also fun items like sequined UGGs and a beautiful northface jacket)…and of course tons of FOOD. which made my run on monday pretty darn phenomenal. (dont you just love when overeating carbs pays off?)

Suffice to say, my new headphones are motivating me to workout today and also all of the candy consumed over the past couple days ;)

favorite thing to eat cottage cheese with is FRUIT! strawberries and pineapples are too good to be true with it.

I love they way working out makes me feel! I love to start my day with a great workout.

I made a veggie stiry fry last night and it was AWESOME! The menu for the rest of the week is as follows:
Two bean soup with kale
Caprese Melts
Turkey burgers
Asparagus risotto
Falafel with avocado spread
black bean soup

If you mix cottage cheese with vanilla extract and a little sweetener it tastes like cheesecake. I wouldn’t lie about something this serious- try it now!

I make a super similar recipe for lasagna with grilled eggplant and zucchini instead of noodles.

Cottage cheese and pineapple all the way. Or just by itself, I love cottage cheese! My husband used to make fun of me for eating it, then I noticed entire containers were disappearing – turns out he finally tried it and realized he loved it too, but was too embarassed to tell me since he knew I’d give him a hard time after making fun of me for years :)

A good healthy treat that uses cottage cheese, and also happens to resemble lasagna: Bowl of steamed or roasted spaghetti squash, add steamed veggis of chocie, tomatoe/spaghetti sauce, cottage cheese= faux lasagna.
Additional topping choices: /basil, nutritional yeast, parmasean cheese.

That’s like the exact way I do the normal meat lasagna…so basically just meat instead of the veggies. I’ll have to try this healthier version!

Today I was motivated to go hit the TM hard so that I would feel awesome all day and wouldn’t have to workout after work (and let’s face it – it probably wouldn’t have happened). Also motivated by all the awesome treats from Christmas that I want to eat. :)

Love cottage cheese with crackers, on salads, plain, with fruit, with pasta, etc. Steve thinks it’s nasty, but he’ll eat it when I cook with it.

Okay, you HAVE to watch Unbreakable about Western States! IT is AWESOME and totally inspiring. It is great to watch on the treadmill because you want to run 100 miles with them… I just bought the DVD online and watched it last night while running 8 miles. it was AMAZING and totally Janae worthy.

Wanting to get back to my pre-wedding size is the motivational factor that keeps me hitting the gym early in the morning before work. Getting up to an alarm at 6:30 a.m. is no easy task! I love the way I looked in my wedding dress but I’ve probably put on about 10 pounds since then. Guess that’s what happens when you have to cook to satisfy a man’s appetite all the time :)

I haven’t had cottage cheese is a long time actually! I’m pretty much a purist when it comes to it though, a sprinkle of pepper and fresh shredded hard parmesan cheese.

Over here we get nice ryvita mini crackers that are sweet chilli flavour, or sundried tomato- those dipped in cottage cheese are amazing. Or cottage cheese and salsa on a jacket potato. Yum.

Apple butter cottage cheese tastes fab on top of my whole wheat brancakes this morning :D It’s also good as a mayo sub in tuna fish!
