My New Favorite Recipe!

If you remember from THIS POST, my sis and I went to Costco and tried Taboule.  We became obsessed quickly.  My bank account didn’t like my obsession and so I was determined to make it on my own.

I think I may have a problem because this recipe yields close to 10 cups and I made my second batch in three days today.

I don’t know why I have a guilty look on my face.  Oh yeah, a few minutes earlier Billy caught me using my finger to dig out the goods from his jar of pb.

This would be the final product. It is heavenly.  Next batch I will put in a cup and just drink the dang stuff.  I use it for salads, when I need a spoonful of happiness, chips obviously, dip veggies into it….you could use it on a sandwich or anything that you wanted!

Recipe adapted from Allrecipes.com

Ingredients

  • 1 cup bulgur
  • 3 tomatoes, seeded and chopped
  • 2 cucumbers, peeled and chopped
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 cup chopped fresh parsley
  • 1/3 cup fresh mint leaves
  • 2 teaspoons salt
  • 1/2 cup lemon juice
  • 2/3 cup olive oil

Directions

  1. Place cracked wheat in bowl and cover with 2 cups boiling water. Soak for 30 minutes; drain and squeeze out excess water.
  2. In a mixing bowl, combine the wheat, tomatoes, cucumbers, onions, garlic, parsley, mint, salt, lemon juice, and olive oil. Toss and refrigerate for at least 4 hours before serving. Toss again prior to serving.

I may have gone a little crazy with the food processor and the beautiful tomatoes at the store (these are just my excuse for not having friends and staying home all day) and made some homemade salsa using MEGAN’S RECIPE!!!!

I made tuna wraps and they were heavenly. Everything tastes better with homemade salsa.

Yeah so my nice camera is in the shop getting fixed (I guess it isn’t a good idea to take a DSLR into a sand storm) and so you are going to have to deal with my point and shoot that I have no idea how to use.   Learn from my mistakes and treat nice things like they are nice (the camera store guy gave me a 20 minute lecture and I have learned my lesson).

-I like mine hot but Billy says what I call hot is just medium so I guess MEDIUM:)

Yum, I love taboul, especially on salads. I love redoing restaurant recipes. My most recent one was Olive Garden's Venetian Apricot Chicken. It's my favorite thing there and it came out super good!

Taboulli is awesome, carbs and fats and a bit of veg all in one convenient condiment (and yes, I eat it with a spoon, too.)
You should try making it with quinoa. YUMM.

I totally go through cooking and baking kicks. Usually at the start of each new season because I get excited to make recipes with seasonal fruits and veggies…..or soups in winter….you get the idea.

I'm seriously so excited for you and can see in your posts that you are ecstatic and so thankful to have running back in your life. Your point and shoot pictures are still great, but I'm sure you miss your DSLR. If I ever saved up enough and wanted to splurge on a DSLR, I don't think I'd ever let it leave my side, and would put it back in the bag as soon as I was done taking a picture…

I so go through cooking kicks, mainly in the summer time when I am not teaching and have more down time. Recently, I have been on a kick of coming up with different protein muffins/pancakes to snack on.

First off, Happy Running Day! I'm so happy to hear that you can run again! Reading your posts about running or wanting to run have been motivating me to get my bum out of bed in the morning and knock out a few miles. :)

Second, must…try…this…recipe. My mouth is watering. This taboule sounds so deliciously fresh; it's been insanely hot here in DC and cold foods are just what I need.

Yay! I love making things at home that I discovered at Whole Foods or restaurants. It's so much cheaper and you can add whatever you want to it. I love HOT salsa. Billy buys a jar of mild and a jar of hot and mixes them. He says it's better than medium. :)

What kind of camera do you have? I have just a plain point and shoot digital camera but the pictures never turn out very well and whenever it's in the hands of someone else taking the picture it turns out REALLY bad. I like the idea of a DSLR but they seem so bulky to carry around all the time. What kind do you have? Would you recommend it, or even recomend a DSLR over any other kind of camera?

yummy…probably one of my all time fav things to eat are tacos/burritos/wraps. i'm a total wimp though and don't like anything too spicy. :/

I love trying to recreate restaurant meals at home! And, yes I go on baking and cooking kicks all the time. I like to do go all out some weekends and stock up the freezer for busier times.
I made Curry Almond Tilapia the other night – my own creation inspired by a few other recipes.
Medium salsa, but the hubby likes it hot so I always add extra garlic and jalapeños when I make salsa for him.

I got a lecture from the camera guy too when all of my buttons started sticking. I told him that was just one of the consequences of cooking and photographing at the same time. So I bought a bunch of stuff for damage control and hopefully I won't have to return again anytime soon.

I LOVE salsa! I eat it pretty much everyday! I like mine Hot! My husband can't handle the kick, so we end up having medium!

I LOVE creating my own versions of stuff! I usually try to make it a little healthier, and my husband almost always likes my light version better than the original! Or at least he tells me he does :)

I definitely go through phases where I want to cook/bake EVERYTHING! I love to recreate foods I love so that it's cheaper and I can eat it at home in my PJs!
The kind of salsa I like it kind of more like tomato soup….really really mild, I'm such a baby!

I LOVE coconut shrimp but it's fried and greasy so I can't eat it too often BUT I did make my own adaptation: coconut crusted tofu. It was dee-lish!

medium salsa! LOVE it!

I don't think I've ever tried to recreate a recipe like that. I never would have even thought to.

Usually when I get out of school I go on a baking kick and experiment with a bunch of different recipes because I haven't been able to for so long. Then I get burned out and stick to my go to quick meals. I love spicy salsa. I'll even add siracha sauce to make the salsa spicier!

I don't take my DSLR anywhere! I'm so paranoid that something will happen to it. I should have gotten the step down and saved money, plus then I might actually use it.

I love cooking so much I decided to make a career out of it!

I lived off tabouleh and hummus my freshman year of college. I hated everything else at the dinning hall.

I love remaking recipes from restaurants.

I am one of those bake when your stressed kind of people. Anytime I feel stressed I want to bake stuff. It also makes me want to eat it, but that's a whole other issue.

Hot salsa for me! The hotter the better. Salsa should make you sweat buckets.

I love my salsa hot, hot, hot!! Ok, we don't have a food processor right now and I'm going a little crazy…we looked at one yesterday and the hubby asked how bad I wanted one – silly hubby, if I've been talking about something for legit over a month, you guess how badly I want it. I have never made my own salsa, only guac, so I need to make salsa because it is fab and I could probably eat it everyday!

I do and actually we use that same recipe for taboule. I have to because like you most things I love cost way to much when prepared by someone else. I cook A LOT, at least two of our meals every day I prepare. Hot salsa always!
