So, I haven’t talked about pizza for awhile but that doesn’t mean I haven’t been eating it.  We made a huge Christmas Eve Pizza Feast.

I tried a new method of having one piece in each hand and alternating bites from 2 different types of pizza.  Try it.

My Mother-In-Laws amazing pizza dough recipe:  (Makes 3 pizzas) P.S. It is super quick too.

Put the pizza stone in the oven and preheat to 500 degrees.

In a mixer bowl put:

3.5 cups hot tap water

3.5 cups bread flour

1/4 cup sugar

3 Tbs instant yeast

Mix until moistened, cover, let “sponge” for 8 minutes.

Then, add 1 T. salt and remaining bread flour (4-6 C).  From the time you start the mixer and start adding flour until desired consistency is reached, let the mixer knead for a total of 8 minutes.

Remove dough from mixer bowl and pinch off three equal portions.

Spread cornmeal on one of the pizza peels.  Roll out the dough, alwayys pushing from the center towards the outside.  While rolling the dough, occasionally “slide and shake” the dough to make sure it isn’t sticking to the peel.  If it sticks, lift the dough and spread more corn meal under it.

With a pastry brush, brush the pizza dough with garlic, olive oil and garlic salt.

Total baking time is 7 minutes!!! Pop any bubbles in the dough with a sharp knife at about 3.5 minutes, put on your toppings and finish cooking.

Pesto, mozarella, veggies and the avocado was the best part.

IMG_3068.JPG

Thai chicken: Peanut sauce, carrots, white bean sprouts, cilantro, chicken, roasted peanuts.

IMG_3069.JPG

BBQ Chicken with avocado and red onion.  I forgot what the other half was sorry.  Memory loss at the age of 24…it happens.

IMG_3063.JPG

My creation and personal fave: Pesto, mozzarella, tomato’s, chicken and cilantro.

Of course we had to make a dessert pizza! Butter, cinnamon sugar, pears and white chocolate chips.  Random works when all of the ingredients are amazing.

Where and what was the best pizza you have ever had?

– I really might have to say this dough recipe and these combinations are my absolutely favorite ever.  I will go to Italy one day and eat pizza for ever meal…along with gelato that is.

What did you have for breakfast this morning?

-Salad and oatmeal squares. Normal I know.

Mmm that pizza looks so good!!! The best pizza I've ever had is at the Gaslight Company in Portsmouth, NH. Try it. For breakfast I had egg & cheese on an english muffin and mountain dew. The usual for me. :) I'm not doing good about quitting the caffeine.

Pizza is pretty much one of my favorite foods ever! I LOVE IT. And ya know what? I rarely make it at home for some crazy reason. The best I've had was in Italy, but I've found a couple of great places in Dallas, too. Mmmm. Now I want pizza. I love that you just listen to your body and go with the cravings for breakfast – I think that is so important! I had oatmeal for breakfast. I topped mine with cinnamon apples today.

Yum! Oatmeal Squares are amazing!!! I had just plain old oatmeal and coffee for breakfast.

I'm going to try this pizza dough recipe! It's looks awesome!!

Sounds like you're having a wonderful break!!! Enjoy! :)

You always make my mouth water with your posts!!

The dessert pizza looks so scrumptious! And all of the veggies on pizza one make it so colorful and fiber-li-cious! How do you decide?! I could eat them all!

Hope you are rcovering from your accidental marathon + 1.8!!!

p.s. If Billy and I ever build a house and design a kitchen (and win the lottery), I want a wood-burning pizza oven! And I'll invite you over to use it. You can make your mother-in-law's crust.

you sure you didn't get the wrong Julie? hahaha! ;p

I'm a sucker for jalapeno, pepperoni, and black olive. AWESOME.
Is this dough recipe better than the other one?!

Delish. I kept thinking about you and your 28-miler while I was struggling on the treadmill this morning! Of course I only made it 8 miles…

Seriously… can I join your family?

The best pizza I've ever had in the world was when I was in Rome. It was a flatbread pizza with fresh tomatoes, basil, olive oil, etc… It was by far the best thing that has ever happened to me.

This morning I ate apple pie oatmeal. YUM!

My faaavorite pizza was at this brazilian restaurant where they bring out several different pizzas and you can ask for slices of any of them, and it was a super thin crust w/ chocolate sauce, caramel and strawberries!!!!

I went to Italy for a week and ate pizza every day. Its amazing. It's definitely a bucket list thing. ALthough I never ate Pizza in Naples which is supposed to be where it was invented. OH darn guess I'll have to go back :)

Your pizza's look awesome. I've never made my own dough before i'll have to try it.

Breakfast this morning: Spelt english muffin, 2 poached eggs one on each side and iced coffee with soy milk.

Yum!

Best pizza I've had is at Big Fred's in Omaha, NE (where I went to college).

Breakfast #1 was PB & honey toast (pre-run);
Breakfast #2 was Raisin Bran Crunch, yogurt and chocolate crunch bells from my kids' stockings (post-run);
Breakfast #3 was a Zone bar (choc almond – yum!) and Dove dark chocolate hearts (because that's all I could find in my office and breakfasts #1 and #2 didn't fill me up!)

I am in blog love with HRG. Girl crush.

Love some BBQ chix pizza, but now that I saw that peanut sauce one, I am going to have to try it!

Breakfast … funny you should ask … raw baby spinach, almonds, dried cranberries and feta salad, banana, peaches & cottage cheese. This is called redemption for all the crap I have been eating. This was followed by 6 various Christmas cookies between 9 and 10 AM.

Reply

I had two Trek Berry Energy bars and 1.5 bananas and 2 cups of coffee for breakfast in preparation for a 10K trail race I was supposed to run…but was cancelled half an hour before the start due to ice on the course.

I was not a happy bunny.

P.S I want that first pizza. All of it.

Reply

that pizza looks incredible! I'm so hungry right now!!

I had oatmeal and an apple for breakfast…a little more normal than yours ;)

Hi there, found your blog thru Christina's post today.

You have me craving pizzas now. I haven't even thought of pizza for a long time. I'll have to show the fiance so he can make it. Me and bread making don't seem to get along well.

Which Big Bear are you referring to? We have Big Bear here in Southern California too.

Reply

HAHAHAHA at your bro-in-law!!! :D
Wow dessert pizza…mmm…
Breakfast was…er…cereal. Not quite as interesting as yours! :P

I won! I won!! Thanks Janae and Uptown Girls/Poppyseed Boutique!!
That pizza looks amazing!

Those pizzas look AMAZING – I cant wait until Im at my more normal goal weight and with all this running can stop looking at those pics and trying to calculate ww points and talk myself out of eating something like that and just enjoy a piece!

Breakfast was a shakeology shake this morning (first time, not as bad as I thought and surprisingly filling and gave me full energy for my workout)

FYI love the blog!

Um, okay, so we can go to Colorado and go for a run and eat ice cream, but then we also have to make this pizza.

My best pizza ever… I think we'll say three-way tie between the pizza I had in Germany, a pizza my mom makes with pesto and shrimp, and pizza from Rosati's.

Breakfast was a piece of bread before running, then an english muffin with garlic salt, light butter, and parmesan cheese, clementines and a pear.

Reply

Can't believe I won! First time winning anything on any blog contests! WOOHOO!

Your pizza looks sooo yummy. It's nearly lunch time here and I am already hungry, lol.

Reply

They all look amazing! I'd love to try the peanut sauce one.

My best pizza ever comes from a little joint in the small town in Ohio where I grew up. Crave it to this day!

Reply

We had pizza and wings on Sunday and it was amazing!!! I could live off pizza! Of course the in laws are doing a home made pizza night Thursday and we won't be there :( this morning I had multi grain cereal. It was so yummy. No coffee though

That first pizza just made my stomach audibly growl. Oh my goodness that looks insanely delicious. A veggie pizza with avocado needs to show up on my doorstep like… now.

Best pizza ever is from this place in Dover, NH that does brick oven pizzas. The crust is made out of the stuff they make their garlic knots out of, so the crust is garlicky and buttery and parmesan…y. Then, in case the crust wasn't delicious enough, there's the fresh mozz, tomato, and basil. It's TO DIE for. You can only eat like one slice before you want to explode but the pain is soooo worth it. And I only get it like once a year hahaha.

Best pizza?? NYC!!!!!!!!!! Right up the road from where I went to college in Brooklyn.

Today I had a cliff bar because my hubs and I went food shopping. Usually I eat eggs, love eggs! I make them with spinach.

BTW I'm still in awe of your 28 miler.. sheesh

That dessert pizza looks so good!
Best pizza I've ever had: a local place that serves Chicago-style deep dish.
Today I had my typical green monster with a frozen banana, chocolate protein powder, milk, and spinach.

For dinner we are making personal BBQ chicken pizzas! That pesto looks great! Wish I had some of that in the house! Super pizza envy!

Reply

I used to work @ a pizza shop for a few years… I had some of the weirdest pizza ever. Think Chinese food pizza. . . LOL. But dessert pizza tops it off! MMMMMM :)

Reply

I LOVE homemade pizza! BBQ chicken is where it's at ;)

Reply

Your MIL's pizza recipe looks very similar to mine. Love it!!

I like to put in some (maybe a tablespoon) ground flax and also some oats- just a few (like 1/4 cup)and I sometimes add soy protein to it.
Very yummy!

The best pizza I have ever had has to be just about any I have had after an amazing workout.

I love my own pizza, but after the Eugene Marathon I ate at Pappy's Pizza in Eugene and had one that had pesto, artichoke hearts, black olives, sausage and feta.

It may sound strange, but it was DELICIOUS.

Oh, Congrats to the winners!!!!

How are your knees doing after the LR and icebath? Big bear is still at elevation :) …are you running there?

Reply

These all look amazing!! I understand why you might want to stay in this reality! :) For breakfast today I had a Starbucks latte for the first time in a whole week! My fave pizza has spinach, peppers & veggie pepperoni on it, and is on thin multigrain crust – delicious!

You are killing me!

Those pizzas look insanely delicious. I was full about 5 minutes ago and I'm pretty sure your blog just created some room in my tummy somewhere.

They make a special yeast for pizza dough! My dad's company makes it and we make pizza on the grill.

Reply

Those all look AMAZING. Especially the pesto one. pesto is definitely my favorite condiment and possibly a top 10 favorite food.
As for favorite pizza goes that is impossible to decide because I have never met a pizza I didn't like, but in recent memory, the Vegetarian @ California Pizza Kitchen (with goat cheese, of course) sticks out as particularly nummy.

Holy SMACK!! I'm away from the computer for a couple of days and crazy people go for 28 mile runs!!!! OK-you must be just on top of the world after that one. Nice job!! Sub 3-NO doubt. Olympics-TOTAL possibility!!! You're my idol-ha!

Pizza-my FAVORITE food! I love Margherita pizza from Pazzaluna in St. Paul. If for some Godforsaken reason you ever leave the beauty of Utah for the frigidness of Minnesota-this is a great restaurant!

I eat the same thing for breakfast every day. Old fashioned oats raw mixed in Greek yogurt with cinnamon, bananas, and dates. Boring but I love it!

Reply

Oatmeal w/ fruit…my go to breakfast almost every day…I get stuck in such a rut! I should go crazy and have salad some day instead! :)

LOVE staying in jammies! We got "snowed in" (we live in SC so it doesn't take much to get you "snowed in" – I love it) this weekend and wore jammies Saturday and Sunday! Nothing beats that. :)

Oh God! Pizza is my LOVE! You don't even understand! Truly. In my former blog – it was always highlighted in my life :).

Lovin' YOURS and the BBQ one! But I usually just love traditional sauce over BBQ sauce.

And I love Oatmeal Squares! I'd have 5 bowls…and maybe a salad bowl on the side – why not? ;)

Reply

I love pesto pizzas! My fav pizza is cottage cheese as the sauce, then loaded down with spinach and topped with some moz cheese.

Reply

I am obsessed with Oatmeal Squares, though I hardly ever get them. Why??? Also, I would like to dive head first into those pizzas. Thank you. :)

Reply

ahah i LOVE oatmeal squares! that pizza looks amazingg!! I had oats for breakfast with TONS of toppings :)

Reply

O.k. Now I'm officially craving pizza. And all of them look amazing but that pesto, mozzarella, and veggies looks to die for. I love pesto. It's good mixed with regular sauce too.
My favorite is sausage (I'm a sucker for pork), green peppers, and sliced tomatoes with pesto sauce.
